Production process: Machine harvesting, rapid processing: destemming and crushing, tank fermentation with cap immersion, controlled fermentation with yeast inoculation (25–28 °C). Contact time on the skins: 3 weeks, followed by natural malolactic fermentation also in the tank; barrel aging for 5 months in small (225 L) BQ barrels that have been reused multiple times; bottling after clarification and filtration. Color: crystal clear, medium ruby. Aroma: Red fruit aromas such as cherry, sour cherry, and red currant, along with a hint of spice (vanilla) and smokiness derived from the brief barrel aging. Palate: medium-bodied, with medium tannins and fresh acidity. On the palate, the red fruit notes are just as pronounced, along with a hint of variety-specific spice (white pepper, vanilla). The finish is pleasant and easy to drink, retaining its fruitiness and freshness throughout.
