For this wine we have developed and registered the Nivegy Valley Protected Designation of Origin. At the end of fermentation, half of the wine is put into 500 litre fine lees barrels and the other half is matured in tank. The wine still has a nose of chalky soil, varietal and subtle barrel notes, which are expressed on the long and persistent palate with medium acidity. Our classic category wines, like this organic Italian Riesling, are recommended for ageing for 1-3 years. Even at one year of age, it holds up beautifully, with lovely bottle notes emerging in the second year.
